Big Apple Pie

crust for a 10", 2-crust pie
8 C peeled, cored, and sliced apples
1/2 C brown sugar
1 T lemon juice
1 1/2 T Minute Tapioca or tapioca flour
1/2 t cinnamon
1/4 t nutmeg
  1. Preheat oven to 400F
  2. Mix all the pie filling ingredients together and let it sit while you roll out the crust.
  3. Roll half the crust into a 13-14" circle and lay it in the pie pan. Put the apples in the bottom crust. Roll the top crust into an 11-12" circle, lay it on top of the apples, and pinch the crusts' edges together. Cut several slits in the top crust.
  4. Bake for 30 minutes, then turn the oven down to 375F and bake for another 30 minutes. If it gets too brown at any point, cover it loosely with tin foil for the rest of the baking time. Cool before serving.
