Blackberry Vinegar

You can use this as-is for an easy salad dressing.

Yield:1 quart

3 C blackberries, fresh or frozen [Picture of salad and some vinegar]
2 C rice vinegar
2 C sugar
  1. Puree the blackberries, then mix in the vinegar and sugar and let sit overnight.
  2. The next day, bring the mixture to the boil and simmer 5 minutes. Let cool, then press it through a sieve. Pour into bottle and store in the refrigerator.
