Easy Chocolate Cake

This cake is really quick to mix up. You can vary its flavor by adding spices (cinnamon?) or nuts.

Yield:1 9-inch cake

1 3/4 C flour
3/4 C cocoa
1 C sugar
1 t baking soda
1/4 t salt
1 C soy milk soured with a teaspoon of lemon juice
1/2 C oil (walnut oil is good here)
  1. Preheat oven to 350F/180C.
  2. Whisk the dry ingredients together, then add the wet ingredients and mix it all together.
  3. Turn the batter into a greased and floured 9-inch/22cm round cake pan (or an 8-inch/20cm square one), and bake for about 30 minutes.
