Fudge Pudding Cake

Very quick and easy, this makes its own sauce.


1 C flour
2 t baking powder
1 t salt
2/3 C sugar
6 T cocoa
1/2 C soy milk
2 T oil
1 t vanilla
1/2 C chopped pecans
1 C brown sugar
  1. Preheat oven to 350F.
  2. Sift together the flour, baking powder, salt, sugar, and 2T cocoa. Add milk, oil, and vanilla, and mix until smooth. Add pecans. Put into a greased shallow 1-qt. baking dish.
  3. Mix brown sugar and reamining 4T cocoa and sprinkle over the batter in the dish. Pour 1 1/2C boiling water over the top.
  4. Bake for 40 minutes, and serve warm.
