Concord Grape Pie

This pie is sweet-and-sour, kind of like a gooseberry pie.

2 pounds Concord grapes
3/4C sugar
1/4C Minute Tapioca
crust for a 9" pie
  1. Preheat oven to 400F.
  2. Wash and stem the grapes. Peel them, saving the skins in a big bowl. Simmer the pulp for a few minutes, till soft, then press it through a sieve into the bowl with the skins. Discard the seeds. Mix in the sugar and tapioca.
  3. Roll out the bottom crust and lay it in your pie pan. Pour the grape mixture into the bottom crust. Roll out the top crust, cut a little hole in the center of it, and lay it on top of the pie. Fold the crust's edges over and crimp it.
  4. Bake for 20 minutesthen turn oven down to 350 and bake for 45-50 more minutes, till crust is golden brown.
  5. Cool completely before serving.
