Concord Grape Pie
This pie is sweet-and-sour, kind of like a gooseberry pie.

- Preheat oven to 400F.
- Wash and stem the grapes. Peel them, saving the skins in a big bowl. Simmer the pulp for a few minutes, till soft, then press it through a sieve into the bowl with the skins. Discard the seeds. Mix in the sugar and tapioca.
- Roll out the bottom crust and lay it in your pie pan. Pour the grape mixture into the bottom crust. Roll out the top crust, cut a little hole in the center of it, and lay it on top of the pie. Fold the crust's edges over and crimp it.
- Bake for 20 minutesthen turn oven down to 350 and bake for 45-50 more minutes, till crust is golden brown.
- Cool completely before serving.
