This pudding is remarkably fresh-tasting because the strawberries are never cooked.

- Sweeten strawberries with 1/4 cup sugar and let stand 30 minutes.
- Drain; add enough water to juice to make 2 cups. Combine berry juice and water, tapioca, remaining sugar, and salt in saucepan; mix well. Place over medium heat and cook until mixture comes to a full boil, stirring constantly.
- Remove from heat, cool, stirring occasionally.
- Add berries and lemon juice. Chill.
