Strawberry Tapioca

This pudding is remarkably fresh-tasting because the strawberries are never cooked.

Servings: 6

2 cups sliced strawberries
3/4 cup sugar
2 cups berry juice and water
1/4 cup Minute Tapioca
1/4 teaspoon salt
2 tablespoons lemon juice
  1. Sweeten strawberries with 1/4 cup sugar and let stand 30 minutes.
  2. Drain; add enough water to juice to make 2 cups. Combine berry juice and water, tapioca, remaining sugar, and salt in saucepan; mix well. Place over medium heat and cook until mixture comes to a full boil, stirring constantly.
  3. Remove from heat, cool, stirring occasionally.
  4. Add berries and lemon juice. Chill.
